2 schnitzels (e.g. beef, chicken)
8 rashers short bacon, chopped
⅓ cup Worcestershire Sauce (local brands Beerenberg or Spring Gully are good)
grated cheese suitable for melting on top (e.g. Colby)
Place a small amount of oil in a fry pan and heat over medium heat. Place chopped bacon in hot oil and stir continuously until browned and crisp, then transfer the bacon into a bowl. Add more oil to the pan, and over medium heat cook the schnitzels.
While the schnitzels are cooking, pre-heat the griller. Pour Worcestershire Sauce over the bacon.
When the schnitzels are cooked, place them on the grilling tray. Spread bacon mixture evenly over the schnitzels and top with grated cheese. Grill until cheese has melted and is golden. Serves 2.
