Snack Balls

‘Salted Caramel’ Raw Bites

1 cup chopped Medjool dates, seeds removed (approx 12 dates)

1 cup (140g) chopped raw cashew nuts (or peanuts)

1 teaspoon vanilla extract

¼ – ½ teaspoon sea salt (or crushed sea salt flakes)

Method: Place ingredients in a food processor and process until ingredients come together and form a soft ball. Turn mixture into a bowl. Using clean hands take tablespoons of mixture and roll into balls. Makes about 10. Store covered in the refrigerator. Amount of vanilla extract and rock salt to suit taste.

 

Apple & Pecan Bliss Balls

1½ cups (100g) finely chopped dried apple slices

½ cup (60g) chopped pecan nuts

½ cup chopped Medjool dates, seeds removed (approx 6 dates)

1 tablespoon honey

1 teaspoon cinnamon

1 teaspoon nutmeg

Method: Pre-heat oven t0 170ºC. Line a baking tray with baking paper. Place chopped pecan nuts on prepared baking tray. Bake in oven for 5 minutes, or until lightly toasted. Remove from oven and cool on tray.

Place chopped dried apple, chopped dates, honey and spices in a food processor bowl and process until mixture begins to come together. Add cooled pecan nuts and continue processing until ingredients form a ball. (Add some extra honey if too dry.) Turn mixture into a bowl. Using clean hands take tablespoons of mixture and roll into balls. Store covered in refrigerator. Makes about 10.

 

Choc Orange Bliss Balls

1 cup almond meal

1 cup desiccated coconut

3 tablespoons cocoa powder (or carob powder)

zest (grated rind) of two oranges

2 tablespoons fresh orange juice

2 tablespoons honey

Method: Add all the ingredients to a food processor bowl and process until they come together to form a smooth ball. Turn mixture into a bowl. Using clean hands take tablespoons of mixture and roll into balls. Store covered in the refrigerator. Makes about 10. Note: These balls can be made by hand, rather than a food processor.

 

Peanut Butter Brownie Balls

1 cup chopped Medjool dates, seeds removed (approx 12 dates)

1 tablespoon cocoa powder (or carob powder)

2 tablespoons peanut butter

1 tablespoon honey

¾ cup chopped raw almonds

cocoa powder for dusting (optional)

Method: Place dates, cocoa powder and peanut butter in a food processor bowl. Process until dates become mushy. Add honey and raw almonds and continue processing until mixture forms a ball. Turn mixture into a bowl, and using clean hands take tablespoons of mixture and roll into balls. Store covered in the refrigerator. Makes about 10. Balls can be dusted with extra cocoa powder if desired.
