2 medium zucchinis, grated
2 medium carrots, grated
1 small brown onion finely chopped
200g bacon (or ham), chopped
5 large eggs
1 teaspoons vegetable stock powder
3 tablespoons olive oil
1 cup plain flour
80g tasty cheese, grated
2 tablespoons grated parmesan cheese
Salt & black pepper to season
Pre-heat oven to 180ºC. Lightly grease a baking dish (approx 30cm x 22cm), or line with baking paper.
Place grated zucchini, carrots and cheese together with chopped onion and chopped bacon (or ham), into a very large mixing bowl.
In another bowl whisk the eggs, oil and vegetable stock powder, then pour this mixture over the other ingredients. Stir to combine. Add plain flour and continue stirring until combined.
Pour the mixture into the prepared baking dish and bake in the oven for 50-60 minutes, or until cooked through and slightly golden on top. Serves 4.
