Choc Cream Cheese Muffins

50g butter, softened

½ cup sugar

1 large egg

1 teaspoon vanilla extract

½ cup milk (or almond milk)

1½ cups plain flour

1½ teaspoons baking powder

½ teaspoon ground cinnamon

140g tub Cadbury Philadelphia cream cheese

 

Cinnamon Sugar Topping

¼ cup sugar

2 teaspoons cinnamon

3 tablespoons butter, melted

 

Method

Preheat oven to 180ºC. Spray muffin tray with cooking spray and set aside.

In a large bowl cream together butter and sugar, using an electric mixer on medium speed. Add egg and vanilla extract and continue beating until combined. Stir in milk. Sift together flour, baking powder and cinnamon, then gently stir into the mixture, making sure not to over mix.

Spread a dessertspoon of batter over the bottom of one of the muffin pans. Place a teaspoon of the Cadbury Philadelphia cream cheese in the centre, and top with another dessertspoon of batter, making sure batter covers the cream cheese. Repeat for each muffin pan. Mixture makes about 8-9 muffins.
