Apricot Slice

2 cups self-raising flour

½ cup milk

½ cup raw sugar

125g butter

½ cup coconut

400g tin pie fruit – apricots or apples

 

Pre-heat oven to 160°C. Line a 20cm x 30cm slice tin with baking paper. In a large bowl, melt butter, add pie fruit, sugar, milk, coconut and sifted self-raising flour. Mix well. Spread into prepared tin. Bake at 160°C for 25-30 minutes, or until golden on top and cooked through. Remove from oven and cool on a wire rack.
