Ingredients
1 tablespoon olive oil
¾ cup raw unsalted cashews
3 level teaspoons curry powder
1 cup full-fat plain Greek yoghurt
½ teaspoon lime zest
1 tablespoon fresh lime juice
sea salt, to taste
Method
Place olive oil in a medium saucepan, and bring to medium heat. Add cashews and cook for 3 minutes, stirring occasionally. Add curry powder and stir over heat for a further 2 minutes. Remove from heat and allow cashews to cool in the saucepan. Add yoghurt, lime zest and juice and stir to combine. Transfer mixture to a food processor bowl, and process until smooth. Season with salt if desired. Spoon mixture into a serving bowl, cover with glad wrap and refrigerate for a minimum of 30 minutes.
